藜麦沙拉 Quinoa Salad

食材:

1杯藜麦
2杯水
1.5杯切半的小番茄或番茄丁
1罐(15盎司)黑豆,沥干并冲洗
5个大葱,切成碎末
1/4杯新鲜芫荽,切碎
1/2杯熟玉米仁
盐和黑胡椒粉调味

调料:

1/4杯特级初榨橄榄油

用平底锅把藜麦和水烧开。
将火调至中低火,盖上盖子,用文火煮至藜麦变软,收汁。
放在一边冷却。
将橄榄油、青柠汁、孜然、1茶匙盐和红椒片一起放入碗中搅拌均匀。
将藜麦、番茄、黑豆和大葱放在碗里混合。
将调料倒在藜麦什锦上,搅拌均匀。拌入芫荽,用盐和黑胡椒调味。立即食用或放入冰箱冷藏。

Ingredients:

1 cup quinoa
2 cups water
1 1/2 cups halved cherry tomatoes or cubed whole tomatoes
1 (15 ounce) can black beans, drained and rinsed
5 green scallions, finely chopped
1/4 cup chopped fresh cilantro
1/2 cup cooked kernel corn
salt and ground black pepper to taste

Dressing:

1/4 cup extra-virgin olive oil
Juice from 2 limes
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon red pepper flakes, or more to taste

Bring quinoa and water to a boil in a saucepan.
Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed.
Set aside to cool.
Whisk olive oil, lime juice, cumin, 1 teaspoon salt, and red pepper flakes together in a bowl.
Combine quinoa, tomatoes, black beans, and green onions together in a bowl.
Pour dressing over quinoa mixture; toss to coat. Stir in cilantro; season with salt and black pepper. Serve immediately or chill in refrigerator.
